SUNDAY RECIPE: Preparing Viazi karai (fried potatoes)

We wish all our Muslim brothers and sisters the very blessed Ramadan, it is that time of repentance, reflection, prayer and doing good deeds to others. Share with the needy in the society and you will be blessed.

Since the Holy month of Ramadan, Muslim faithful take their food at the dawn and break the fast in the evening, I have seen in their menu some plates of Viazi karai (Fried potatoes) and this forms our Sunday recipe.

Instruction – 1.

Wash the desired quantity of potatoes that will fit the family, the number of people to be served, if you have some guests or not it doesn’t matter provided people get satisfied. However, if you are just alone and preparing it for yourself, imagine you are doing the right it’s your body you are treating, furthermore you can’t please everyone in this world, expect more criticism from human beings than praises.

Instruction – 2.

Peel your potatoes and wash them to remove any remaining particles or soil, remember potatoes are from the ground and may carry some soil particles. By the way potatoes with some purplish cover are extremely sweet and tasty. Now put them in a sufuria and add enough water to let them boil for about 8 minutes. Don’t forget to add some salt in the boiling water. Don’t boil for long because you will later do a deep fry.

Instruction – 3.

Use the 8 minutes of your boiling pot to prepare some tamarind soup. This is Tamarind soup and not juice. Where you will just put peeled tamarind pebbles in clean water and get that thick brown soup. Then add some salt to taste and some slices of onion, remember you have to get that cool aroma from the tamarind soup. For those who do not know how to prepare tamarind soup, we will do a separate recipe, so worry not.

Instruction – 4.

In a separate bowl put some baking flour, and some salt to taste and then add some water and star. Add some food colouring to attain yellowish mixture until it is a fine porridge-like mixture then set the bowl aside.

Instruction – 5.

Now remove your boiling pot full of potatoes from the fire and leave it open so that the potatoes cool down. One thing you should consider is that in all the process, salt is involved so please do not put much of it as the final product may boil your tongue until your eyes are red-hot instead of you enjoying your food or iftar for that matter.

Instruction – 6.

Now put your frying pan on the fire and add cooking oil so that you make a proper deep fry. Now that your half ripen potatoes have cooled. Using your frying spoon deep them little by little in the wheat flour mixture and slowly put the potatoes from the mixture to the now hot cooking oil on fire. Remember to pray first being a Sunday, so that your exercise goes smooth. Repeat the process, pick your boiled potatoes from sufuria, deep them in the wheat flour thick yellow porridge-like mixture then to the frying pan until they are golden brown then remove them to a dry serving bowl.

Instruction – 7.

By now you are sweating and hungry at the same time because of the hot exercise in the kitchen, but because you are hungry you need to feed yourself well, or you may end up with open ribs like those guitar strings. Your food is ready, you can pick a potato, deep in tamarind soup and straight to the mouth. You can take your food with tea, a glass of juice, water or just the potatoes, they are very sweet remember.

Something serious to note is that you have to be patient enough until it is time to break the fast or else because of the aroma you may end up breaking the fast right in the kitchen before the required time.

Have a beautiful Sunday in the kitchen and if you have not invited anyone, when your bowl full of fried potatoes is on the table and someone knocks the door just think very quick and fast and act. How you will act and react is purely none of my today’s business.
